3 Easy Tofu Vegan Recipes

 1. Avocado, Tofu, Mango salad

 

This combination is almost fail proof. They work wonders with each other and never fails to make a wonderful dish with really lightly seasoned fresh ingredients. Almost everything about this bowl is raw too and packed with nutrients and protein. 

 

Ingredients:

- 150 grams (or half a block) of pressed tofu 

- 1 avocado

- Half a mango

- A handful of almond nuts, sliced

- 2 tablespoons of cooked green peas

- 1 tablespoon of pumpkin seeds

 

Method:

1. Steam the pressed tofu lightly and cut it into triangular pieces

2. Slice the avocado and mango 

3. Top off the salad with almonds, green peas and pumpkin seeds

4. Optional: drizzle with dressing like sesame sauce 

 

 

 

2. Tofu Stir Fry with mushroom and edamame

 

If you love stir fry Asian-style this can be a good option with tofu. Using only 3 simple ingredients you can feel full without being bloated by cards. Definitely one of my favourite tofu dishes to cook at home.

 

Ingredients:

- 150 grams or half a block of pressed tofu

- 10 pieces of frozen edamame peas

- 10 button mushrooms, sliced

- Salt and pepper for seasoning

- Red bell pepper for garnishing

- Extra virgin olive oil

 

Method:

1. In boiling water, cook the edamame peas until it's soft

2. Squeeze the peas out of its shell
3. Put the edamame peas, sliced mushroom, pressed tofu into a pan (on medium heat)
4. Toss it with oil, salt and pepper

 

 

3. Tofu Scramble

 

Breakfast for (vegan) champions. No eggs no problem, we can still enjoy a heart healthy tofu scramble which tastes just as delicious with the right ingredients. In this version there are many spices which makes the tofu scramble really fragrant and super close to the taste of an omelette. 

 

Ingredients: 

- 1 small onion, chopped
- 1/2 red bell pepper, diced
- 4 sliced mushrooms
- 2 tablespoons vegetable oil
- 1/2 cup water
- 1 block 450g firm tofu, crumbled
- 1/4 teaspoons of turmeric
- 1/4 teaspoons of paprika
- 1 teaspoon of onion powder
- 3 tablespoons of nutritional yeast
- 3/4 cup of organic sugar free soy milk
- 1 teaspoon of salt 

Method:
1. Preheat a large pan over medium-high heat, drizzle oil 
2. Stir fry vegetables like onions red pepper and mushrooms 
3. Add water and continue cooking until vegetables are soft

4. Crumble the tofu in a bowl 
5. Stir in tofu, turmeric, paprika, onion powder, basil, nutritional yeast, maple syrup, soy milk, salt and pepper
5. Let it cook for about 5 minutes until it reaches your desired texture
