Cauliflower "Fried Rice" with Corn, Cilantro & Lime

I love rice and in Asia it is almost impossible to go without it for a long period of time. But some times it can be the worst weight loss enemy, it is impossible to go on a diet if rice is part of the daily meal plan. One of the solutions can be replacing these carbs with something that pretends to be rice, like cauliflower. 

 

To be honest sometimes it is all in the head, that you need to eat spoonfuls of rice to stay energized. But if you cook replacement carbs like grated cauliflower the same way as  you would have cooked rice, there are not that much difference. It actually made me really full for a long period of time too and I love eating large bowls of this without feeling guilty. The fiber-rich Cauliflower contains many different types of nutrients such as omega-3 fatty acids, manganese, phosphorus, and biotin. Additionally, it is also a good source of vitamin B1, B2, and B3, the minerals potassium and magnesium, and protein. 

 

Ingredients: 

- 1 large Cauliflower (about 2KG with stem)

- Half a garlic, peeled

- 2 pieces of lime

- 1 stick of corn (not from the can), skin peeled

- A handful of cilantro

- Salt and pepper for seasoning

- 2 tablespoons of coconut oil

 

Method:

1. Cut away the stem of the cauliflower, leave as little stems as possible 

2. Chop the garlic and cilantro briefly

3. Put all three vegetable (cauliflower, garlic and cilantro) into a blender

4. Blend it only with a few quick and short pulse, do not blend so long that it becomes grainy

5. Cook the corn in a hot boiling water and gently take it off the cob 

6. Now on a non-stick pan, drizzle coconut oil all over

7. Cook all the ingredients on medium heat, keep stirring

8. Grate the skin of the lime and add salt & pepper

9. Once done, garnish with more cilantro on top and more lime juice
