
This Green Apple Carrot Salad is one of my absolute favourites. It's so simple to make and really really tasty at the same time, it only takes 4 ingredients! Because of this I always make sure that I have fresh granny smiths and red carrots stocked up in my fridge so that I can have it anytime I feel like it. Most people whom I made this for love it as well, they are usually surprised by how well a sour fruit and a vegetable can go so well together. For the sauce I usually drizzle it with Japanese sesame sauce but a low fat sauce like honey mustard goes well with it too.
Ingredients:
- 1 carrot
- 1 green apple
- a handful of walnuts
- 2 tablespoons of sesame sauce
Method:
1. Use a vegetable slicer and cut the green apple and carrot into thin slices
2. Toss them up and drizzle sesame sauce
3. Finish off with walnuts
