Mango Passionfruit Vegan Cheesecake

I am on a roll making and experimenting with Vegan Cheesecakes, maybe also because I love sweet treats but my oven is down. I just love the creamy texture and the fragrant nutty taste of something that is so raw and nutritious. Just nuts, coconut and fruits! Plus I usually eat it over a few days with one batch of Vegan Cheesecake. 

 

This version is made with Mango and finished with passionfruit which naturally gives the "cheese" a sweet taste without the need for maple syrup or honey.

 

 

Ingredients:

Base

- 100 grams of almonds

- 100 grams of dried mango

- 1 table spoon of peanut butter

- 1 tablespoon of coconut oil

 

Cake

- 200 grams of cashew soaked over night

- 2 tablespoons of coconut milk

- 1 teaspoon of lime juice

-  Half a mango 

 

Toppings

- Half a mango

- Passionfruit

- Banana

 

Method:

1. Blend all the ingredients for the base on high speed until mixture is fine

2. Grease a cake pan, press the base on the bottom gently with a spoon

3. Blend all the ingredients for the cake on high speed until mixture is smooth 

4. Pour over the pan evenly

5. Slice the mango and spread on the cake mixture, followed by passionfruit and banana

6. Leave in the fridge for 8 hours
