Soba Noodles With Edamame

I try to avoid carbs as much as possible but when I do, I make sure that it's a damn good carb. Soba noodles is one of the noodles I can eat all day without feeling guilty. Even when I am going out, I will always order the cold soba noodles with just a simple sauce. It's filled with nutrients like protein, fiber, iron and it's gluten free. Not only is it easy to make, the noodles need very very minimal dressing or seasoning to taste great. Here's my favourite homemade version:


- Pre-packed Fresh Soba noodles (found in major supermarkets, like Fairprice)

- About a handful of frozen Edamame

- 1 stick of Carrot

- 2 tablespoon Sesame sauce

Method: 1. Boil/steam the Edamame for about 5 minutes until the beans are cooked

2. Take out the Edamame and squeeze out the beans

3. Pre-packed soba is already cooked, but you can soak it in hot boiling water for a while (15 - 20 seconds) and put it onto a bowl of ice immediately. Soba noodles are best served cold.

4. Peel the skin off the carrot and shred it into thin slices 5. Mix all three ingredients together and drizzle sesame sauce all over it
