Spiced Pumpkin and Purple Sweet Potato Soup


On a rainy day the only thing that I crave for is a warm bowl of soup. Hot, spicy and filling. I cooked this with two of my favourite two ingredients: pumpkin and purple sweet potato and finished with a little bit of chilli (can't live without). The best part about cooking soup is chewing less and knowing that your body will have maximum absorption of whatever nutrients the food has to offer. Can't wait to make this again!

Ingredients:

- 3 purple sweet potato

- 1/2 a pumpkin

- 2 tablespoon Coconut milk

- 1 tablespoon Coconut oil

- Salt & pepper

- 1 teaspoon of ground Cinnamon

Method:

1. Remove the skin of the the pumpkin and purple sweet potato

2. Cook in a pot on boiling water separately

3. Blend separately in a blender on high speed until it becomes gooey

4. For the purple sweet potato add in coconut milk and coconut oil, salt & pepper

5. Add in ground cinnamon to the pumpkin mixture

6. Pour both mixtures into a bowl and garnish with your favourite spices
