Tofu Scramble

Tofu Scramble is the best breakfast for (vegan) champions. It's not eggs and it does not contain dairy but gives enough protein and favour for a complete brunch set.

 

My favourite way  to eat it is on toast and with a side of pan roasted veggies. Great way to start a day!

 

Ingredients: 

- 2 blocks of firm, pressed tofu

- 1 red pepper

- 4-5 small potatoes

- 2-3 tomatoes

- 3 slices of bread

- 1/2 teaspoon of turmeric

- 1/4 teaspoon of cumin powder

- 1/4 teaspoon of oregano seasoning

- 1 tablespoon of vegetable oil

- Salt & pepper

 

Method: 

1. Cut the tofu into really tiny pieces and mash it up further with a folk

2. Pan fry the tofu with turmeric, cumin and vegetable oil, add a pinch of salt & pepper

3. Keep stirring till tofu is in clumps 

4. To cook the veggies, pan fry them with vegetable oil and oregano seasoning, add a pinch of salt and pepper

5. Serve together on a plate with fresh bread
