Cold Sesame Soba Noodles

Soba noodles are a staple in my fridge. In the supermarkets in Singapore they stock ready made soba noodles that are really cheap ($1.50) and all you need to do is just bring them out to boil. My favourite way of eating is cold noodles and usually with salad toppings. In this way it goes really well with sesame sauce as well. You can't go wrong with edamame, tofu and mushroom to accompany soba noodles.


- 1 packet of ready made soba noodles

- 2 tablespoons of Japanese sesame sauce

- 50 grams of pressed tofu

- About 10 pieces of frozen edamame

- 2-3 button mushrooms

- A pinch of salt


1. Heat up the soba noodles in a pot of boiling water until noodles are soft

2. Put the noodles in a bowl and cool it down with ice

3. Cut the tofu into small cubes

4. Cook the edamame by putting them in a pot of boiling water, once cooked squeeze out the peas

5. Gently panfry or steam the sliced mushrooms

6. Now mix everything together and drizzle sesame sauce together
