Easter Bunny Vegan Cookies

Easter is in two weeks! I love baking and sharing cookies around during Easter and since being vegan, eggs and chocolate are both a no-no. After experimenting a few times I managed to make a set of VEGAN Easter Bunny Cookies that were so yummy they were all eaten up almost immediately by my friends. These cookies are like shortbread, but no butter or baking soda were used.

Ingredients (makes about 20 cookies)

- 1/4 cup organic coconut oil at room temperature (liquid form)

- 1/8 caster sugar

- 1 teaspoon vanilla extract

- 1 teaspoon water

- 0.5 cup wholemeal flour

- A pinch of salt


1. Mix all dry ingredients (flour, sugar salt) together, remember to sieve

2. Add in wet ingredients (oil, vanilla extract, water), mix well

3. Use a cookie mould to get the desired bunny shape

4. Put in the over at bake at 175 degrees for about 10 minutes
