Vegan Apple Pie (or Tart!)

You can never go wrong with a classic Apple dessert. Guess what happened when one day I decided to get Granny Smiths over the usual Fuji Red Apples! Baking an Apple Pie.

The OCD in me had fun slicing every single piece of apple into almost the exact same thickness and in equal size and shape. That's not all! To layer them piece by piece evenly to form a "swirl" is challenging yet very satisfying when you see the pie top forming nicely. But well I can never be @Lolokitchen, hahaha. This pie is still in my fridge and I am devouring it slice by slice for breakfast, snack AND dinner.


- 3 granny smiths

- 10 medjool dates

- 250grams almonds

- 100grams oats

- 3 tablespoons of coconut oil

- 2 tablespoons of date syrup or maplesyrup

- Cinnamon powder


1. In a blender on high speed, blend the almonds and oats till it became a fine powder

2. Mix in wet ingredients (2 tablespoons of coconut oil, 1 tablespoon of date syrup)

3. Pour the mixture into a lightly greased pan and press VERY HARD to create a solid crust - I used a glass

4. Put the crust in the fridge while you work on the fillings and top of the pie, the longer you put the more solid it will be

5. For the fillings, dice one granny smith and blend it with the 10 medjool dates on low speed until it form a paste. It does not need to be super gooey like a paste but a chewy texture will be just nice. Spread it evenly on the crust.

6. Slice the 2 granny smiths with hyper focused knife skills into thin layers and create the swirl top. Start from the outside and work towards the center.
