Mango Bread - Vegan and Sugarfree

Banana bread is common but Mango Bread seems to be rarely heard of. I attempted to bake a loaf of Vegan Mango Bread and I can see why - the taste of mango hardly comes through. Perhaps it's the nature of the fruit or maybe because I used fresh overripe mangoes instead of can ones, but the mango taste is not as strong as I wanted it to be. BUT the texture is amazing, I can say even better that of banana bread. The sweetness is still there even though there's zero presence of any kind of sugar. If you really want the mango taste to come through, you might want to add in chunks of mango in the mixture or add honey/sugar to the mixture.


- 2 cups of wholemeal flour

- 2.5 overripe mango

- 3 teaspoon of baking soda

- A pinch of salt

- 1/4 cup of coconut oil


1. Scoop out all the flesh in the overripe mangoes and blend until smooth in a blender

2. Mix all dry ingredients together (remember to sift the flour!)

3. Add in oil to the mixture, mix well with a spatula

4. In a pre-heated over, bake for 30 minutes at 175 degrees
