Good morning! It's (vegan) pancake time

Pancakes are like the ultimate breakfast. Nothing cheers me up more than a stack of fresh pancakes after waking up in the morning. While I have tried many different variations of Vegan Pancakes, this is one of my favourites as it's really filling and tasty without the nasty stuff that usually go into pancakes (butter, sugar etc). I ate this with pure peanut butter and fruits likes strawberries, raspberries and banana... super delicious! 

 

Ingredients
- 3 cups all-purpose flour 

- 2 tablespoons raw cane sugar

- 1 teaspoon baking powder 

- ¼ cup coconut oil

- ½ teaspoon vanilla extract 

- 3 cups soy milk 

- 3 tablespoons vegetable oil
- Banana, rasberries & strawberries

- Maple syrup

 

Method:
1. Combine and sift dry ingredients together flour, sugar, baking powder and salt 

2. Add in remaining wet ingredients and whisk until mixture is smooth
3. Grease non-stick pan with vegetable oil and switch on medium heat

4. Pour about 1/4 cup of batter into pan

5. Cook pancakes for 2 minutes on each side until lightly golden

6. Repeat with remaining batter, adding oil as needed

7. Top pancakes with maple syrup and fruits
