Vegan Pancakes

This Vegan Pancake recipe has been with me for years. Ever since I discovered soy milk and flour can both produce fluffy and delicious pancakes, this has been my go-to for a sunday-lazy-stay-home breakfast. I mean you can literally wipe this up in less than 15 minutes. Typically pancakes are filled with non-vegan friendly ingredients like eggs, butter and milk but in this recipe, none of that is being used yet it still tastes and looks like you regular ol' pancakes.


- 1 cup wholemeal flour

- 1 cup organic soy milk

- 1.5 teaspoons of baking powder

- 1 banana

- 2 tablespoons of coconut oil

- Cinnamon powder

- Honey to drizzle over


1. Sift the flour and baking powder, mix it together with the soy milk and 1 tablespoon of coconut oil

2. Mix well until no clumps are visible

3. Drizzle coconut oil on a large pan on medium heat

4. Scoop up about 1/3 cup of the mixture and spread it evenly into a circular form on the pan

5. After one side slightly cooked (about 30-40 seconds) flip it gently to the other side

6. Once the pancakes are done, make the honey cinnamon glazed banana slices on the same pan

7. Pour over the banana slices and drizzle more honey over
