Vegan Peanut Butter Brownies

A great snack to motivate yourself to wake up on a work day after a long weekend.... a batch of brownies! This is 100% vegan and made with my favourite food of all time which is peanut butter. I go through a jar a month and usually with spoonfuls while watching Netflix. I eat so much peanut butter that if I ever accidentally got cut I am afraid it's not blood that's flowing out it's peanut butter. Bad joke, late April fools :-)

Ingredients for the brownie:

- 3/4 cup brown sugar

- 1 1/4 cup flour

- 1 1/2 teaspoon baking powder

- 1/2 cup cacao powder

- 1 cup natural peanut butter (I use Adams, the crunchy version)

- 2 teaspoons vanilla extract

- 1/3 cup peanut oil

- 1/2 cup chocolate almond milk

Ingredients for the peanut butter glaze:

- 1/4 cup peanut oil

- 1/2 cup natural peanut butter

- 1/4 cup brown sugar

- Roasted peanuts


1. Pre-heat the oven to 175 degrees. Line a baking pan with aluminium foil

2. In a mixing bowl, sift and mix together the dry ingredients (baking powder, flour, cacao powder) and brown sugar

3. In another bowl, mix and blend till no clumps at all the wet ingredients (peanut butter, peanut oil, vanilla extract, almond milk)

4. Combine both mixtures together and continue to blend with a mixer until it's really smooth

5. Pour the mixture to the lined pan and make sure the surface is even

6. Bake for 15 minutes - test check with an utensil (a knife or something) by inserting into the brownie and see if it comes out clean. If it does, it's ready!

7. While you cool the brownie, start on the glaze

8. On medium heat, add the peanut oil, peanut butter and brown sugar on a small pot

9. Keep stirring until mixture is even, typically about 5 minutes

10. Let it cool down as it thickens

11. Pour the glaze over the brownie and sprinkle roasted peanut butter

12. Keep the brownie in the fridge to hold the texture and set the glaze
